Once upon a time, (that wasn’t so long ago) when the air got a little cooler, the trees started changing into their fiery and brilliant coats and the wind started to whistle, there was a pumpkin festival. At this festival, they had what one would call – if looking through rose colored glasses – the best pumpkin chocolate chip cookies ever.  One little girl in particular looked forward to the festival for that reason. Walking through the barn to get to the bakery selling the little gems wasn’t nearly as interesting as the first bite of that forthcoming treat. Sadly, the owner of the farm died and his children no longer wished to carry on the family tradition. The little girl grew up ( somewhat) and through the years, no matter how hard she tried, never found a pumpkin cookie that was satisfactory when compared to the one she remembered from long ago. So instead of looking to purchase one, she decided to try her hand at baking them on her own.  Alas, one recipe was too sweet, the other was to muffin-y, this one was too chewy and the last one tasted too heavily of canned pumpkin.

But this year, upon the new arrival of fall, hope returned once more to our “heroine” and she tried yet again to make the perfect cookie.  Happily, she believed she finally created the right recipe.  So, she baked.  The moments that followed after they were placed in the oven seemed like an eternity. Would her quest finally be be completed?  Once, they were tolerably cool, she reached and grasped the golden cookie. With one bite, she immediately knew…after 6-7 years, she finally had succeeded. The cookie was light, crispy on the outside, and chewy on the inside. Dark chocolate oozed out with every bite. The sweet, fragrant aroma of cardamom, coriander, nutmeg, turmeric, and cloves danced around in the air and the first bite was truly magical!  So the girl lived happily every after because now she had the perfect cookie to accompany that first glass of eggnog.  (Wait until I share THAT recipe!)

Spiced Dark Chocolate Pumpkin Cookies


  • 16 tbsp. (2 sticks) butter
  • 1 cup coconut sugar
  • 1 cup packed light brown sugar
  • 1 cup rolled oats
  • 1 egg
  • 1/2 cup pureed pumpkin
  • 3 cups flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  •  1  tsp. salt
  • 2 1/2 cups dark chocolate chopped

 Spice Mixture:

  • 1tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/8 tsp. clove
  • 1/8 tsp. cardamon
  • 1/8 tsp. coriander
  • 1/4 tsp. turmeric


Preheat oven to 375°. Place pumpkin and spice mixture in a small bowl and stir to combine.  Using an electric mixer, cream butter and sugars together in a large bowl until fluffy, about 3 minutes. Add vanilla, pumpkin, and egg and beat until combined, about 30 seconds. Add oats, flour, baking powder, baking soda, and salt and beat until combined, about 30 seconds. Stir in chopped chocolate.
  Chill dough overnight  or for at least four hours and then scoop into 1” balls and place onto a baking sheet with parchment paper. Bake for 9  minutes taking care not to over bake. Remove from oven and let cool.  Serve with plenty of milk.
