Warm weather is officially upon us and it’s here to stay! This time of year means a couple of things for me. The end of the “dance season” at my studio ( not that its actually ever over), Summer intensives, longer days, more time to read books, refreshing drinks and of course grilling!
Today, I’m going to share a recipe with you that is a healthier alternative to french fries. A couple of weeks ago, I was in the mood for crispy potatoes, but I didn’t want to fry them. Since I was already grilling some meat on the grill, I decided to go ahead and try grilling the potatoes as well. I cut the potatoes into wedges, and seasoned them with olive oil, salt and pepper. Then I grilled them for about 10 minutes each side. Meanwhile I chopped rosemary, along with some salt and when the “fries” were ready I tossed them with the herb mixture. The only thing that could make these potatoes better is probably this garlic aioli but then again….doesn’t a garlic aioli make everything better? 🙂

Herb Grilled Potatoes with Garlic Aioli

For the Grilled Potatoes:
- 5-6 clean Russet Potatoes
- 1/2 tsp salt
- pepper to taste
- 3 sprigs rosemary
- olive oil
Preheat grill to medium high heat. Then cut the clean potatoes into wedges, then toss with salt, pepper, and olive oil to coat in a large bowl. Place wedges in an even layer on grill and close lid. Let them cook for 8-10 minutes before turning over and cooking for another 8-10 minutes. Mean while, chop the rosemary along with the the salt and place in a bowl large enough to fit the all the potato wedges. When the potatoes are done cooking toss them in the bowl with the rosemary and shake till they are evenly coated. Serve while warm the garlic aioli.
For the aioli:
- 4 Cloves of Garlic finely chopped
- 4 tablespoons Mayonnaise
- 1 tablespoon Lemon Juice
- 1teaspoon Dijon Mustard
- salt and pepper to taste
- 1 tablespoon olive oil
Combine all ingredients in a bowl, and stir till combined. Cover and chill till needed.
