hgreen bean salad

 

It is Summer here, the weather is pretty much unbearably hot, the sun is scorching and I’m meeeelting. Right now I’m super busy preparing to go out of town to a summer intensive, there are so many things to think about and so many places to go and no time to melt into a puddle. Sadly the heat is making being out and about really annoying right now, and I’m getting tired of frizzy hair, leather seats burning my legs and intense sunlight. I know….it’s only June.

Now is the time of year that I personally prefer to spend a little less time outside and am looking for any excuse to stay indoors where it’s cool!  Today. I give you an excellent excuse to stay indoors so you can keep cool as well.  Ladies and gentlemen, I give you ( drum roll, please) a green bean salad! This green bean salad is no ordinary salad, it is light, flavorful and is filled with so many yummy things.  For starters, it has olives. Olives are one of the best things EVER, in my book and they make everything better. Then it has capers, fresh herbs, tomatoes, and a lemon dressing.  Is your mouth watering, yet? My mouth is! This salad is so good. I literally could eat the whole bowl by myself.  It’s my hope that you and your guest will love this dish as much as I do, and you will feel good about your excuse to stay indoors! 😉

 Green Bean Salad:

ingredients:

1 pound clean and already trimmed green beans

1 cup cherry tomatoes

1/4 favorite olives

2 tsp. capers

2 green onions

1/2 of a lemon

2 sprigs oregano

salt and pepper to taste

4 tbsp olive oil

Method:

Preheat broiler to hi heat. Place green beans on a baking sheet and drizzle with enough olive oil to lightly coat, then sprinkle salt and pepper over the green beans. Place the baking sheet underneath the broiler for 5 minutes. When timer rings turn the green beans over and cook for another 5-8 minutes.   Meanwhile chop the olives, capers, tomatoes, green onions, and oregano and place in a large bowl.   Then pour the juice from half a lemon and the 4 tablespoons of olive oil into the bowl. Season with salt and pepper to taste, and then stir.  Once green beans are done cooking place them into the large bowl along with the other salad ingredients and toss to combine. Let chill till room temp, or until needed. Enjoy!

 

ps. Some other really good things to add to this salad are avocado,feta and shallots!

    Love this salad. It reminds me of summer and slower days.
